Peanut Butter Ice Cream Cookie Sanwich

Dairy-free and Gluten Free (does contain eggs)

Ingredients:

  • 1 cup peanut butter (I prefer chunky)

  • 2/3 cup brown sugar

  • 1 tsp baking soda

  • 1 egg

*salt is optional- The peanut butter may be salty already.

Directions:

  • Heat oven to 350. Mix all ingredients in bowl. Roll dough into 1 inch balls and press criss-cross pattern with fork across. Bake 10 minutes. Cool and spoon your choice of non-dairy ice cream onto the backside of one cookie and top with another and serve immediately or freeze. Makes approximately 16 cookies.
