Watermelon Poke

Recipe:

Sauce

2 Tblsp toasted sesame oil

2 Tbsp coconut aminos

2 Tbsp rice vinegar

1 tsp siracha (optional)

Ingredients

2 cups chopped watermelon

1 chopped yellow pepper

1 chopped cucumber

1 avocado sliced

1 bunch green onion sliced

Optional-firm tofu and mango

2 cups uncooked sushi rice

2-3 seaweed sushi sheets

Directions:

Mix all sauce ingredients in a medium shallow bowl or casserole dish. Marinate the watermelon (and tofu if using) in the sauce for 2-3 hours. Cook sushi rice according to package (I put mine right in the rice cooker). Prepare rest of ingredients and arrange all ingredients in a bowl. Serve with seaweed sheets.
