Black Sesame Gingerbread

For those looking for a wholesome sweet treat this holiday season, try this mindful indulgence made with a few simple, whole -food ingredients, and naturally sweetened with maple syrup.

Ingredients:

  • 2 cups toasted, shredded, unsweetened coconut

  • 3/4 cup unsalted, raw cashews

  • 2 Tbsp coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 4 teaspoons gingerbread seasoning

Directions:

Place the shredded coconut and cashews in food processor and process until mixture becomes a paste. Next add the coconut oil, maple syrup, vanilla and gingerbread seasoning. Process again 1-2 minutes. Refrigerate for one hour. Form into little balls and roll in black sesame seeds. Serve immediately or refrigerate until ready to serve.
