Vegan Eggnog Mocktail

This holiday season treat your pregnant and lactating loved ones to a festive mocktail that clearly demonstrates how truly special they are! This recipe includes a cinnamon simple syrup that is divine and includes other basic, wholesome ingredients.

Ingredients:

  • 1/2 cup cold brewed bourbon brew tea or rooibos and vanilla blend tea

  • 1/4 cup oat milk

  • 1 tbsp coconut cream (warmed on low for a coupleminutes to make homogenous)

  • 2 tsp cinnamon simple syrup

  • 1/8 tsp vanilla

  • top with nutmeg and cinnamon stick

Directions:

  • Brew the tea in advance-1 tsp of loose tea packed in a tea basket steeped in one cup of hot water-let steep for 3-5 minutes

  • Pour this with the rest of the ingredients into a jar and shake. Pour over ice and serve with ground nutmeg and a cinnamon stick.

Cinnamon simple syrup:

  • 1 cup filtered water

  • 1 cup brown sugar

  • 3 cinnamon sticks (could substitute one stick with nutmeg pod, cardamom pods or star anise to play around with bolder flavors)

  • Boil the water then add the sugar and stir till dissolved. Add the cinnamon sticks and reduce to a simmer for 5-8 minutes depending on intensity of flavor. Remove from burner and cool. Strain and place in a jar and store in the refrigerator for up to 2 weeks.

Servings=1
